Species

There are about 30 esturgeon species all around the world but only 3 are specifically caught for their eggs.

Beluga is the biggest fo sturgeons (up to 4 meters) and lives the longest. Some can reach 100 years and weight more than a ton. In average, the female weigh 20 to 30 kg. We catch it during Spring and Autumn. Females give from 10 to 15 kg of caviar. It consists of large eggs that are fragile with a discrete end fine taste.

Oscietre
measures up to 2 meters long. It weights from 20 to 40 kg and gives 5 to 10 kg of caviar. We catch it during Spring and Autumn. Its eggs are rather large, from black to golden brown. It has a particular taste.

Sevruga,
also called Stared has got a large pointed muzzle and is maximum 1,80 meters long. It weights from 10 to 20 kg and gives 2 to 6 kg of caviar. We catch it during Spring and Autumn. Its eggs are rather small, grey color, and very appreciated for their strong taste.

Tasting advice

  • Caviar has to be tasted naturally, serve 15 to 20 gr of caviar per person and more for the hungry ones.
  • Serve the caviar in a caviar serving dish. You can crush ice in a wider receptable and place the caviar on an ice bed.
  • Use a spoon in gold (or in plastic) which let intact the taste of the caviar.
  • Introduce always the spoon on the vertical way for not crushing the eggs.,
  • Put down the grains on your tongue, make them run slowly along your palate. You can also have warm toats with butter or blinis with a bit of fresh cream and put the caviar on.
  • Drink frozen vodkas, champagne or dry white wines.
